The summer solstice is a significant event in Wiccan culture and is celebrated by practitioners all over the world. In 2023, the summer solstice falls on June 21st, marking the longest day of the year and the transition into the summer season. Wiccans believe that this day is a time of immense power and energy, as the sun reaches its highest point in the sky. During the summer solstice, Wiccans often gather to honor the sun and its life-giving energy. First, I always bundle up. I layer all of my clothes (even in summer), our warm coats are always near, and our closets are filled with wool socks, sweaters, toboggans, scarves, and boots. We bundle, especially when it snows.

You can hear little drips of water everywhere, and if you pay attention, you can catch little quick movements of animals that venture outside of their homes to play and forage in the snow. I not only find time to nourish my body through food and herbs, but I nourish my mind and emotions by living slower, journaling, reading, working on creative projects, and spending time with friends and family.

Recipe for Magical Curry

Thank you for joining us on our beautiful day! It was a day filled with joy, warmth, beautiful outfits, meetings and reunions, delicious food, and of course, magical love. As a token of our appreciation for your presence, we want to share the secret recipe of our favorite dish: Magical Curry! It’s a creamy red lentil curry bursting with flavor. With the first bite, it feels like a warm, loving hug, and everyone deserves that! 6 teaspoons of magical spice mix consist of 2 tsp curry, 1 tsp cumin, 1 tsp turmeric, 1 tsp garam masala, 0.5 tsp coriander, and 0.5 tsp chili powder. Ingredients for 4 people:

  • Olive oil
  • 1 yellow onion
  • 4 cloves of garlic
  • 4 cm (1.5 inch) piece of ginger
  • 6 teaspoons of Magical Curry mix
  • 250 grams of dried red lentils
  • 750 ml (3 cups) vegetable broth
  • 400 grams (1 can) diced tomatoes
  • 200 ml (half can) coconut milk
  • Salt & pepper to taste
  • 300 gram rijst
  • 4 naans
  • 1-2 spicy red/green peppers
  • Juice of half a lemon
  • A little bit of fresh coriander
  1. Boil 750 ml of water in a kettle or pot for the broth. Rinse 250 grams of red lentils with cold water until the water runs clear.
  2. Add a splash of oil to a large frying pan or deep skillet and set the electric stove to medium. Cut 1 yellow onion into small pieces and sauté on low heat for 5-10 minutes.
  3. While the onion is cooking, press or chop 4 cloves of garlic and 4 cm of ginger into small pieces. If you like it spicy, you can also chop the 1-2 spicy peppers into pieces. Increase the heat to high and add all of this to the pan and cook for 2 minutes.
  4. Add 6 teaspoons of Magical Curry mix, along with a pinch of salt and pepper. Stir well to prevent sticking, and add a little extra oil if it becomes too dry. Cook for a maximum of 1 minute.
  5. Reduce the heat to medium-low, and add the 750 ml of boiling water with a bouillon cube. Scrape the bottom with a spatula to loosen all the spices. Add the washed red lentils and the 400 grams of diced tomatoes. Mix well, put the lid on, and let simmer for about 20-25 minutes. Depending on your pan and the chosen heat, it may be necessary to stir occasionally to prevent sticking to the bottom. The lentils are ready when they fall apart, lose their shape, and become really soft. If the lentils dry out but are not yet soft, add a little water each time.
  6. Meanwhile, cook the 300 grams of rice according to the instructions. Keep the rice warm once done. Also, preheat the oven for the naans (follow the instructions on the package).

When you think the lentils are almost ready, add the 200 ml of coconut milk and stir well. Set on low heat and let simmer for 5-8 minutes without the lid. The curry should be slightly thick and creamy. Put the 4 naans in the oven so that they are ready at the same time as the curry and rice.
  8. As a bonus, add some lemon juice and fresh coriander to the curry, and serve it with rice and naan. Bon appétit!
  9. Leftovers can be stored in the refrigerator (3-4 days) or freezer (for a very long time). The curry even gets better over time!

Lastly, I don’t mind eating hearty soups every day, and neither does my family. Warming foods that are easy to digest are at the top of our list come winter. So are root vegetables. We’re definitely seasonal eaters, or at least, I strive for us to be.
